How to make Campbell’s blueberry muffins
First make the Jinbao Crispy Noodles, mix together the last four ingredients: 25 grams each of butter, white sugar, almond powder, and flour, and knead them into crispy nuggets with your hands. Refrigerate until ready.
Mix the dry ingredients in the main ingredients: 300 grams of flour, 100 grams of sugar, 1/8 teaspoon of salt, and 10 grams of baking powder evenly and sift. Add lemon zest and mix well.

Wash and drain blueberries and set aside.

Combine 125 grams of butter and 185 grams of light cream with hot water and stir evenly; when cool, add the beaten eggs and stir evenly. There will be a little oil and water separation at this time, it doesn't matter.
Mix steps 2 and 4 evenly, add 2/3 of step 3 and mix evenly. Just stir it roughly, don't over stir. The mixed state is as shown in the picture;

Put the prepared Jinbao puff pastry on top. Just distribute it evenly, so all the crispy bits should be used up

Preheat the oven to 180 degrees, I used Hayes C45.

Tips
1. The original recipe of blueberries is 125 grams. Put half in the batter and half on top. But I felt it was too little. It was not satisfying and I added 1/2 blueberries to the batter, which is 60 grams. In this way, you can eat bursting blueberries in every bite, which is very satisfying.
2. Don’t stir the muffin batter too smoothly, just make it rough, otherwise there will be holes in the structure after baking.
3. When the weather is hot, you can put the Jinbao puff pastry in the refrigerator first.
4. Each oven temperature is different, so the baking time and temperature can only be used as a reference. But you must bake it until the blueberries pop. If not, it means they are not cooked yet.
